Rice Bowls with Sassy Peanut Sauce!

Rice Bowls with Sassy Peanut Sauce
For the rice bowls:
Instant brown rice
Cooked chicken or tofu (optional)
Purple cabbage, shredded
Snow peas, halved
For the peanut sauce:
2 Tbsp olive oil
1 1" knob ginger, peeled and grated
1 small garlic clove, minced
1/2 Cup creamy peanut butter
2 Tbsp soy sauce
1 Tbsp fresh lime juice
1 tsp honey
1/4 tsp crushed red pepper flakes (or more to taste)
Heat olive oil in a small pot. Sauté garlic for one minute. Add remaining sauce ingredients and stir. Add water by the tablespoon if needed to thin until smooth. Heat sauce until warm. Serve over brown rice and chicken or tofu (if desired). Top with raw veggies and crushed peanuts.
